MUMBAI: Stringent time slots for patrons and a restricted menu, particularly for desserts. These are among the measures eating places and bars, which reopened on Monday with a 33% occupancy cap within the metropolis and 50% within the state, have taken to hurry-up orders and maximize their restricted operations. On Day One of many reopening, a number of eating places within the state noticed 40% occupancy.

Shivanand Shetty who runs a restaurant in Wadala, and is also the president of the Indian Hotel and Restaurant Association (AHAR), told Times of India, “Introducing time slots for customers is a win-win situation for all stakeholders. With a cap on the customer,r occupancy, earlier closing hour, skeletal staff and multiple SOP (standard operating procedure) to be followed, right from the time a customer walks in till he or she leaves, restaurants have no choice but to request their cooperation”.

 

He also added, “Sanitizing seats frequently for the safety of the next customer who walks in is critical and an elaborate job. Restaurants also have time limits. But this has to be politely Conveyed to the customer, right from the first touchpoint while making a reservation to the end of the time slot. Compared with pre-COVID, now the time involved in serving a customer has gone up. This is the new normal we live in and one needs to be accommodating and rational enough as every minute counts”.

The state authorities have introduced a 10 pm closing time for eating places and bars now in contrast with the pre-COVID deadline of 12 am and 1.30 am, respectively.
